Great question. Here's a quick rundown of all three:
Vinyl is the classic roll-up board — thin, lightweight, easy to wipe clean, and pieces slide smoothly on it. The downside is it can crease or curl if stored improperly, and cheaper versions may not lay flat reliably.
Flex Pad is a fabric top with a rubber backing (mousepad-style). It's about 1/16" thick and actually heavier than vinyl — roughly 40% heavier. It lays flat every time, can be folded or rolled without creasing, and pieces still slide reasonably well. The trade-off is it can stain more than vinyl, though minor stains usually wash out with water.
Silicone is the most flexible and crinkle-proof — you can wad it into a ball and it springs flat again. It's very easy to wipe clean, but the surface is tacky, which makes pieces stick rather than slide. It also attracts dust and lint.
As for weight and sturdiness: Flex Pad is the heaviest of the three and gives the most stable playing surface. Silicone is the most indestructible over time, but the grippy surface is a turnoff for many players.
