Great question. The 3" Standard Staunton chess pieces #4 will look fantastic on your 1 3/4" square size, providing ample room to breathe. These pieces feature a 1 1/8" King base, covering about 67% of your square. If you prefer a slightly more compact look, consider the 3.5" pieces, which fill 78% of the square.
